What you definitely need to cook in summer: list of essential dishes
To fully enjoy every day of summer, you need to get together with friends and cook delicious seasonal dishes that you haven't had time to make yet.
Nutritionist Anastasiia (anastasiia_g) shared a list of dishes to prepare in summer on her Instagram page.
- Baked eggplant and sweet pepper. Peel the vegetables first, then sprinkle with salt and drizzle with oil. Bake the vegetables in the oven.
- Eggplant and zucchini pancakes. You don't need to add flour to the batter, just eggs. If desired, you can add flax seeds and herbs.
- Cold salads with baked potatoes. Alternatively, bitter chicory salad, dried olives and fresh garlic. The most important thing in the dish is the dressing: vinegar and mustard.
- Pasta made from seasonal overripe tomatoes. The pasta in this version is made of lentils, the sauce is homemade tomato paste. The dish can be garnished with olives and lemon zest.
- Baked eggplant.
- Vegan burger with boiled millet and wild mushrooms.
- Fish/meat/poultry grilled with seasonal vegetables: cabbage or green beans.
