Classic chicken chops often turn out dry. This is because there is not enough fat in the meat. Thus, you can add juiciness with eggplant.

The idea of cooking eggplant and chicken chops is published on the hot spicyua Instagram page. Add breadcrumbs to make the products crispy on top.

Ingredients:

  • eggplant - 2 pcs.
  • chicken thigh fillet - 2-3 pcs.
  • green onions, dill
  • mozzarella - 50 g
  • eggs - 2 pcs.
  • breadcrumbs
  • parmesan cheese
  • tomato juice - 100 ml.
  • red salt

Method of preparation:

1. Finely chop the eggplant.

2. Season with salt and leave for 10 minutes.

3. Squeeze.

4. Finely chop the meat and season with red salt.

5. Fry with the eggplant for 10-15 minutes.

6. Add the egg, green onions, and 2 tbsp of breadcrumbs.

7. Put the cheese in the middle of the minced meat and sprinkle with breadcrumbs (add cheese and dill to the breadcrumbs).

8. Form meatballs and fry on both sides over medium heat.

9. Add the tomato juice, sprinkle with Parmesan cheese and green onions, cover and simmer for 3 minutes.
