What to stuff peppers with: an unusual recipe for 12 servings
Stuffed peppers are a delicious dish that has long been a staple in the Ukrainian diet. Typically, this vegetable is stuffed with a filling similar to that used in cabbage rolls. However, why not let your imagination run wild and come up with something interesting and unusual?
That's probably what food blogger Myroslava Pekapryuk thought. On Instagram, she showed how to make stuffed peppers with corn and other interesting ingredients.
Ingredients for 12 pieces
- bell pepper - 12 pcs
- corn - 250 g
- pearl barley - 100 g
- chicken fillet - 500 g
- onion - 1 pc
- tomato paste - 100 g
- flour - 2 tbsp
- sour cream - 2 tbsp
- salt
- pepper
- sugar
- parsley
- vegetable oil
Method of preparation
1. Pour boiling water over the washed pearl barley and leave for 20 minutes.
2. Cut the chicken and onion into random pieces and pass through a meat grinder.
3. Mix the minced meat and onions with the pearl barley. Add corn, chopped parsley, salt and pepper.
4. Remove pepper tails, clean them, stuff them well with minced meat and cover with cut tails.
5. Fry the tomato paste in heated vegetable oil in a saucepan, add a little sugar, salt, and flour, mix well and fry for 1-2 minutes, stirring constantly.
6. Pour cold water over everything, bring to a boil, add sour cream, and season with salt to taste.
7. Put the peppers in the sauce close together and cook over low heat for 35-40 minutes until they are soft.
8. In order for the peppers to stand upright in the pan, you need to cut off the tips a little but so that no hole is formed.
