What to replace sorrel in green borscht with: an unexpected idea
Traditional green borsch is made with sorrel. It gives the dish a rich sour flavor. However, if you are looking for a new original flavor, you can replace the classic ingredient with spinach.

Ingredients for 4 servings:
- medium onion - 1 pc.
- medium carrot - 1 pc.
- medium potatoes - 2 pcs.
- cauliflower (can be frozen) - 6 florets
- spinach (can be frozen) - 200-250 g
- eggs - 1 pc.
- olive oil - 1 tsp.
- garlic - 2 cloves
- spices
- water
Potatoes can be used instead of cauliflower.
Method of preparation:
1. Fry garlic in oil and remove. Add chopped onions and then chopped carrots. Fry for a few minutes.
3. Add frozen spinach and simmer for 5-7 minutes until softened.
4. Add water, salt, pepper, and spices.
5. Add the potatoes cut into small cubes.
6. After 10-12 minutes, add the cauliflower.
7. Cook for another 10 minutes until the cabbage and carrots are tender.
8. Pour the beaten egg into the water and stir.
9. In 1-2 minutes, the borscht is ready.
10. Serve with sesame seeds, bread or croutons.
