Ingredients:

  • long-grain rice - 2 cups
  • chicken broth - 4 cups
  • garlic - 3 cloves.
  • onion - 1 pc.
  • salt - 1 tsp.
  • lime - 3 pcs.
  • zest - 1-2 tbsp.
  • lime juice - 3-4 tbsp. l.

Method of preparation:

  1. Boil chicken broth beforehand.
  2. Peel garlic and onion, chop finely.
  3. In a large skillet over medium heat, heat oil and fry them until cooked - 3-4 minutes.
  4. Rinse the rice and add to the skillet with the rice, salt well and stir to prevent the rice from sticking.
  5. Add the broth, lime juice and zest, stir and bring to a boil.
  6. Be sure to cover with a lid, simmer like this for another 15-20 minutes.
  7. Wash and chop the cilantro and add it at the very end before serving.

Rice balls with cheese

Ingredients:

  • Arborio rice - 1 cup
  • chicken broth - 2 tbsp.
  • pine nuts - 1/2 cup
  • mozzarella cheese - 50-60 g
  • Fontina cheese - 50-60 g
  • parsley - 2 tbsp.
  • eggs - 2 pcs.
  • Parmesan - 1/2 cup
  • breadcrumbs - 1-2 cups

Cooking method:

  1. Boil broth, add salt and bring to a boil, add washed rice and cook for 20 minutes on medium heat.
  2. After - place the rice on a parchment paper-lined baking tray and cool completely.
  3. Mix the nuts with the grated cheeses - mozzarella, fontina and chopped parsley.
  4. In a large bowl beat the eggs, add the cooled rice, parmesan and some breadcrumbs, mix and form balls with your hands, place the mixture of nuts, cheese and parsley inside each one, roll in breadcrumbs and place on a parchment paper lined baking tray.
  5. Be sure to cover with food wrap and send overnight in the refrigerator.
  6. After - in a large saucepan over medium heat, heat vegetable oil and fry the rice balls until golden on all sides, lay them out on a paper towel.
