Currants are a versatile healthy product that can be used to make many delicious dishes, and during the summer preservation season, they will become a top berry. After all, it makes deliciously flavored jelly, compotes, preserves, and many other dishes.

1. Natural currant pastille
Ingredients:
- Currants - 300 g
- Butter - 1 tsp.
- Sugar - 50 g
Method of preparation:
- Wash the currants well, tear off the tails, and sort them so that there are no wilted berries.
- Mash until smooth with sugar.
- Grease a special tray for pastille with oil and put the berry puree in it, spread it so that it "lies down" in an even layer.
- Put it in a special drying oven for 12-15 hours, the temperature must be 50-60 C. But if you do not have a special drying oven for berries, you can use just a baking sheet covered with parchment and greased with oil, you can dry it in the sun, covered with gauze, for one to two days.
- Remove the finished pastille and gently roll it up.
2. Pie with currants, nuts, and orange drizzle
Ingredients:
- flour - 250 g
- butter - 230 g
- eggs - 2 pcs.
- sour cream - 250 g
- baking powder - 2 tsp.
- orange - 1 pc.
- red currant - 150 g
- walnuts - 50 g
- powdered sugar - 300 g
Method of preparation:
- Beat softened butter with powdered sugar.
- Add eggs, preferably one at a time, beat, then add sour cream, and beat again.
- In a separate bowl, sift the flour twice, add the baking powder, mix gently, and add to the sour cream and egg mixture, mix thoroughly.
- Grate the orange zest – 2 tbsp, mix with nuts and currants, add to the dough, mix thoroughly, and put into the mold.
- Put in the oven for 30-40 minutes at 180 C.
- Orange juice and powdered sugar can be used to make a glaze for the cake, just mix the two ingredients.
- Take out the cake and immediately cover it with the orange glaze while it is still hot.
