Soteriou says you simply add a little oil to the jar, which should cover the surface of the canned food in the jar. "Adding a thin layer of olive oil on top of your canned food creates an airtight seal that prevents bacteria from entering the product," she says.
However, you shouldn't forget that it's not best to add oil to all types of preserves. Pesto and various pastes, jars of chopped garlic and ginger, tomato paste and sauce, harissa, chipotle, and other homemade sauces are ideal for this purpose. But it's better not to use oil in jams and preserves.
