Zucchini are excellent vegetables, they contain many vitamins and minerals, they are not high in calories, and most importantly, they can be used to make many tasty and healthy dishes. For example, they can be baked, pickled, stuffed, made into pastries, caviar, and even barbecue.

1. Zucchini casserole with chicken
Ingredients:
- young zucchini – 5-6 pcs
- chicken fillet – 500 g
- onion – 1 pc
- eggs – 2 pcs
- hard cheese – 50-80 g
- sour cream – 3 tbsp
- mustard – 1 tsp
- 4-5 sprigs of parsley
- vegetable oil – 1 tbsp
- Salt, pepper – to taste
Method of preparation:
- Wash the zucchini well, cut off the tips, and grate them on a coarse grater.
- After that, put the vegetables in a colander, and squeeze them out so that all the juice drains out.
- Rinse, dry, and cut the fillet into cubes, put it in a bowl, and add mustard with sour cream, salt, and pepper, mix, and leave to marinate.
- Chop the onion and fry until golden brown.
- Grate the cheese on a coarse grater, chop the parsley, and mix, add the fillets, and mix well.
- Add the fried onions to this mixture, beat the eggs, and add the well-squeezed zucchini, and salt, season to taste and mix well.
- Grease a baking dish with oil, put the mixture in it, and put it in the oven for 40-45 minutes at 190ºC.
2. Warm zucchini and cheese salad with garlic dressing
Ingredients:
- zucchini – 1 pc
- feta cheese – 100 g
- arugula – 100 g
- cherry tomatoes – 5-7 pcs
Dressing:
- dill and parsley – a few sprigs
- garlic – 3 cloves
- salt – 1/2 tsp
- pepper – 1/3 tsp
- olive oil – 2 tbsp
Method of preparation:
- Wash the zucchini, cut into slices no more than 5 mm thick.
- Grease a grill pan with vegetable oil and fry them.
- Prepare the dressing:
- Add the dressing to the zucchini.
- Wash and dry the tomatoes and arugula.
- Put the greens on a plate, and top with grilled zucchini, cherry tomatoes, and cheese.
Serve the salad with a fresh baguette.
3. Zucchini stuffed with cheese
Ingredients.
- zucchini – 2 pcs
- cheese – 200 g
- 1 bunch of dill and parsley
- garlic – 2 cloves
- eggs – 1 pc
- hard cheese – 100 g
- salt, pepper – to taste
Method of preparation:
- Peel the zucchini and cut it lengthwise. Use a spoon or knife to pull out the middle to make "boats".
- Mix the cottage cheese, chopped herbs, garlic, egg, salt and pepper. Stuff the zucchini with this.
- After that, put them on a baking sheet, sprinkle with cheese on top, and bake for 40 minutes at 180°C.
