What to cook with zucchini for breakfast: a recipe for a hearty and low-calorie dish
Zucchini can be cooked not only as a main dish or snack. The vegetable can be a delicious complete breakfast. For example, a casserole. You can also combine any vegetables of your choice, hard cheese, and your favorite spices. It's hearty, healthy, and low in calories.
Food blogger Olha Romanchuk (olya_romanchyk) shared a recipe for zucchini casserole on her Instagram page.
Ingredients:
- zucchini - 1 pc
- eggs - 4 pcs
- hard cheese - 100-120 g
- milk - 150 ml
- feta cheese - 70 g
- tomatoes
- salt, pepper, dried basil
Method of preparation:
1. Grate the zucchini. Salt and gently squeeze out the liquid with your hands.
2. Beat the eggs separately.
3. Mix the eggs with the milk and pour the resulting liquid into the zucchini. Stir to combine.
4. Add grated hard cheese, salt, pepper and basil. Mix well.
5. Pour the mixture into a baking dish.
6. Chop the tomatoes and put them on top.
7. Bake the casserole in the oven.
