1. Bean pate

Ingredients:

• white beans – 200 g
• garlic – 1-3 cloves
• onion – 1 pc.
• oil – 1-3 tbsp.
• salt, pepper – to taste
• vinegar – optional – 1 tsp

Method of preparation:

1. It is best to soak the beans in the evening, and boil them in the morning until tender – about 60 minutes.
2. Put them in a blender, add salt, pepper, and vinegar, and blend until smooth.
3. Fry the onion and garlic until golden brown, add to the bean puree, and mix.
4. Put the finished paste into a suitable container and refrigerate for 1-2 hours.

2. Bean salad

Ingredients:

• canned beans – 350 g
• bell pepper – 1 tsp
• onion – 1 pc
• goat cheese – 50 g
• olive oil – 2 tbsp
• celery stalks – 10 g

• lemon juice – 2 tbsp
• salt – a pinch
• fresh parsley – 1 bunch
• pepper – to taste
• rosemary – 2 tsp

Method of preparation:

1. Put the beans in a bowl, add chopped celery and bell pepper.
2. Cut or crumble the cheese and add to the beans.
3. Combine olive oil, lemon juice, salt, pepper, toss, and season the salad. Stir and add the rosemary.

3. Lean bean patties

Ingredients:

• beans – 500 g
• onion – 1 pc
• carrot – 1 pc
• flour or breadcrumbs – 2 tbsp
• salt, pepper – to taste
• vegetable oil – 80 g

Method of preparation:

1. Boil the beans, transfer to a blender, and whisk.
2. Peel and dice the onion, grate the carrots on a fine grater, mix with the beans, salt, and pepper.
3. Form patties, and roll them in flour or breadcrumbs.
4. Heat a frying pan, add oil, and fry the patties until cooked on both sides.
5. Put them on a paper towel to drain all the excess fat.

The dish is best served hot with fresh vegetables.
