What to cook on the weekend: sweet and savory pies

Winter weekends are the perfect time to bake pies. First, there is free time on weekends for this (at least we hope so). Secondly, there is hardly a better time of year for dough than winter.

Quiche lorraine with salmon and broccoli

For the dough:

  • flour - 250 g
  • butter - 125 g
  • salt - 1 tsp
  • sugar - a pinch
  • water - 3 tbsp. 

For the filling:

  • fresh salmon - 400 g
  • fresh broccoli - 300 g
  • hard cheese - 150 g
  • salt, pepper - to taste
  • lemon juice - 2 tbsp. 

For the filling:

  • sour cream - 300 g
  • eggs - 2 pcs.
  • salt, pepper - to taste

How to cook:

  1. Wash the broccoli, disassemble it into florets, and put it in boiling salted water. Cook for 3-4 minutes. Drain in a colander.
  2. Prepare the dough. Mix the sifted flour with sugar, salt, and diced butter. Grind everything into crumbs. Add ice water and knead the dough quickly. Shape the dough into a ball, wrap it in cling film, and put it in the refrigerator for an hour.
  3. Peel the salmon from the skin and bones (if any), and cut it into small cubes. Finely chop the cooled broccoli, and grate the cheese.
  4. Sprinkle the salmon and broccoli with lemon juice, pepper, salt and mix with half the grated cheese.
  5. Take the dough out of the refrigerator and roll it out to a thickness of 5 mm. Put it into the mold, and form the sides. Cut off the excess dough with a knife. Cover the cake with parchment and pour dry beans (beans, peas, or lentils) on top. Put in a 180-degree oven and bake for 10 minutes. Then take it out, remove the paper and beans, and return it to the oven for another 5 minutes.
  6. Prepare the pie filling. Beat eggs in a bowl, add sour cream, salt, and pepper, and mix well.
  7. Put the broccoli and salmon on the baked crust, pour the filling, and sprinkle with half the cheese on top.
  8. Put in the oven and bake for 30-40 minutes. The exact time depends on your oven: the filling should have the consistency of a casserole and brown a little on top.

Galette with apples

  • butter - 120 g
  • flour - 200 g
  • cold water - 4 tbsp
  • salt - a pinch
  • sugar - 2 tbsp
  • apples - 3 pcs.
  • cinnamon - 1 tsp.
  • vanilla sugar - 1 tbsp.

How to cook:

  1. Mix the butter with sugar, flour, and salt. Grind into crumbs with your hands. Add water and knead the dough. Shape the dough into a ball, cover with plastic wrap, and refrigerate for an hour.
  2. Cover a baking sheet with baking parchment and roll out the dough into a thin circle on it.
  3. Cut the apples into slices, removing the core. Put the apples on the dough, leaving about 4 cm around the edges. Sprinkle with cinnamon and vanilla sugar. Wrap the edges of the dough around the entire diameter.
  4. Put in a 190-degree oven and bake for about 35 minutes.

Puff pastry with chicken and mushrooms

  • puff yeast dough - 1 kg
  • chicken fillet - 400 g
  • mushrooms - 400 g
  • onion - 1 pc.
  • hard cheese - 150 g
  • eggs - 1 pc.
  • salt, pepper - to taste
  • herbs - to taste

In puff pies, you can "play" with the filling at your own discretion: you can take both meat and vegetables or seasonal fruits and berries.

Tart with pear and blue cheese

  • phyllo dough - 5 sheets
  • butter - 50 g
  • medium-sized pear - 2 pcs.
  • blue mold cheese - 150 g
  • brown sugar - 1 tsp.
  • fresh thyme or rosemary - 2-3 sprigs

How to cook:

  1. Melt the butter in a water bath or in the microwave. Put the thawed dough on a work surface. Cut out all five sheets of dough along the contour of the mold, leaving a distance of two fingers wide to form the sides.
  2. Grease the bottom of the mold with oil. Tear the dough into separate sheets. Put one sheet of dough into the mold, and brush it with melted butter. Put another one on top and brush it with butter as well. Repeat the procedure with all the dough sheets.
  3. Cut the pear into thin slices. Crumble the cheese. Put the cheese on the bottom of the mold, then put the pear in a circle on top. Brush with the remaining butter, sprinkle with brown sugar, and finely chopped rosemary or thyme.
  4. Put in a preheated 180-degree oven and bake for about 25 minutes: the sides should be slightly browned. Cool before serving.

Grated pie with jam

  • flour - 420 g
  • butter - 180 g
  • eggs - 2 pcs.
  • jam - 300 g
  • baking powder - 2 tsp.
  • sugar - 300 g
  • salt - a pinch

Any of your favorite jams are suitable for making grated pie. In summer, you can make this pie with any fresh seasonal berries.
