The simplest vegetables are zucchini, but they can be used to make many delicious and very simple dishes that will be a great option for a hearty lunch. If you add cheese, herbs, sour cream, and spices, you'll get an amazing treat.

1. Zucchini baked with sour cream and herbs

Baked zucchini

Ingredients:

  • zucchini - 5 pcs.
  • sour cream - 500 g
  • garlic - 2-3 cloves.
  • eggs - 3 pcs.
  • herbs - parsley, dill, basil - 1 bunch each
  • salt - 1/2 tsp.
  • black pepper - 1/2 tsp.
  • sunflower oil - 50 ml
  • butter - 30 g

Method of preparation:

  1. Wash the zucchini and cut it into slices only, it will taste better.
  2. Be sure to salt and pepper and leave it for 10-15 minutes.
  3. Chop the herbs and garlic, add sour cream, pepper, and eggs, and mix until smooth.
  4. Fry the zucchini in vegetable oil, and put it on a paper towel to drain all the fat.
  5. Then put the zucchini in a baking dish and pour the sour cream mixture over it.
  6. Put in a baking dish for 30 minutes at 180 C.

Add grated cheese before serving.

2. Zucchini casserole with cheese and herbs

Zucchini casserole
  • zucchini - 5 pcs.
  • flour - 2 tbsp.
  • eggs - 2 pcs.
  • cheese - 200 g
  • hard cheese, any - 100 g
  • milk - 1 glass
  • butter - 50 g
  • parsley, basil - 40 g each
  • vegetable oil - 2 tbsp.
  • salt, pepper - to taste

Method of preparation:

  1. Wash and cut the zucchini into rings, and boil them in salt water for about 5 minutes.
  2. Sauce: Melt the butter in a frying pan, add the flour and fry.
  3. Beat the eggs with milk and add to the flour, season generously with salt and pepper, and mix until smooth.
  4. Grease a baking dish with vegetable oil and put the zucchini in it.
  5. Chop the herbs and add the cheese, rub well, and add to the dish.
  6. Pour the prepared sauce over the top.
  7. Put in the oven for 25 minutes at 200 C.
