What to cook for the perfect lunch: an exquisite dish in 30 minutes

Ripe avocado, young asparagus and tender white fish fillet are a simplest set of products that can be used to make a perfect restaurant meal in your kitchen in 30 minutes.
The recipe for Avocado Hollandaise was shared by Jamie Oliver, an English chef, restaurateur, TV presenter, and popularizer of home cooking and healthy eating, on his YouTube channel (to watch the video, scroll to the end)
Ingredients:
- 1 bunch of thick asparagus (350 g)
- 150 g of white fish fillet without skin
- 2 green onions
- 1 lemon
- red wine vinegar
- ½ bunch of tarragon (10 g)
- 1 ripe avocado
- 1 large egg
- extra virgin olive oil
Preparation:
- Pour about 1 cm of cold water into a large frying pan.
- Cut off the woody tips of the asparagus and put it in the pan. Then put the fish fillet on top.
- Put on high heat, cover and steam for 5 minutes or until the fish is fried.
- Meanwhile, chop the green onions and put in a small frying pan over high heat.
- Add the juice of half a lemon, 1 teaspoon of red wine vinegar, a pinch of sea salt, black pepper and 100 ml of water. Bring to a boil.
- Put the leaves of a sprig of tarragon in a blender and add the avocado pulp and egg yolk.
- After that, add the hot onion mixture to the blender, beat until smooth and season to perfection.
- Finely chop the white part of green onions and mix with the rest of the tarragon leaves.
- Oliver recommends serving the dish with a pinch of tarragon, green onions, a little extra virgin olive oil, and lemon slices.
