What to combine liver in a salad with so that it is soft and juicy
It is in a salad that liver can fully reveal its flavor. The key is to combine it with the right foods. Spicy, sweetish sauces and fruit are best.
The idea of making a light salad with liver and pear was published on the Instagram page of food blogger Yevheniia Karpiuk.
Ingredients:
- 700 g of chicken liver
- pear
- brie or gorgonzola chees
- lettuce leaves
To prepare the liver:
- 2 tbsp. flour
- 1 tbsp. cornstarch
- 1 tsp of sugar
- salt
- 2 tbsp. oyster sauce (you can use teriyaki or soy sauce)
Method of preparation:
1. Peel the liver.
2. Dry it well.
3. Add salt and pepper
4. Roll in a mixture of flour, starch, sugar and salt.
5. Fry in a pan in a single layer so that the liver is fried, not stewed. Fry in parts if necessary.
6. Fry it on medium or below medium heat so that it has time to cook. Be sure to keep it covered.
7. Add oyster sauce and a little more sugar. The liver will have a sweetish flavor. Stir and cook for another minute.
8. Assemble the salad: grease the lettuce leaves with a dressing of oil, honey, lemon juice, and grain mustard.
9. Cut the pear into slices. You can fry it if you wish.
10. Cut the cheese.
