What to add to the dough to keep the pampushkas from getting stale for a long time: one simple ingredient
The key to successful homemade pampushkas, which are fluffy, soft and do not get stale for a long time, is properly prepared dough. At the same time, it is not necessary to bake the pampushkas themselves - just fry them.
Food bloggerNatalia Sus shared a recipe for poppy seed pampushkas on her YouTube channel (Home Recipes by Natalia Sus). According to the recipe, you need to add just a little alcohol to the dough, which makes the pampushkas especially fluffy and allows them to stay fresh longer.
Ingredients:
- milk - 450 ml
- yeast - 60 g
- sugar - 120 g
- butter - 120 g
- eggs - 3 pcs
- sour cream - 3 tbsp
- vegetable oil\sunflower oil - 3 tbsp.
- alcohol - 4 tbsp
- vanilla sugar - 10 g
- flour - 900-950 g
- Powdered sugar (for sprinkling)
- vegetable \ sunflower oil - 700 ml (for frying)
Filling:
- dry poppy seeds - 1.5 tbsp
- powdered sugar
- butter - 30 g
You can also use jam, canned cherries.
Method of preparation:
1. Mix yeast, 1 tbsp of sugar, milk and 100 g of flour in a bowl. Stir, cover with a towel and leave until a so-called cap is formed.
2. Meanwhile, beat the eggs with 0.5 tsp of salt and 100 g of sugar until fluffy.
3. Add sour cream to the melted butter. Mix well. Add the resulting mass to the eggs along with vegetable/sunflower oil and vanilla sugar. Stir to combine.
4. Add the dough to the resulting mass. Mix well.
5. Gradually add flour and alcohol. Knead the dough. It will be sticky and stick to your hands. Cover the dough with a towel and leave it for 1 hour.
6. For the filling, first steam and grind the poppy seeds, then mix them with butter and powder.
7. Form the dough into pampushkas with the filling. Leave them for 15 minutes to rise.
8. Fry the pampushkas in a large amount of oil until golden brown.
9. Put the finished pampushkas on a paper towel, then sprinkle with powdered sugar.
