What to add to the dough for bagels to make them tender and puffy

Bagels are one of the easiest options for home baking. They are a great alternative to a variety of cakes, pastries, and cookies. To make the texture of the dessert very tender and fluffy, the dough should be made on the basis of cottage cheese.

The idea of making bagels with cottage cheese dough was published on the page of food blogger Victoria (cook_with_me_at_home) on Instagram.

Ingredients:

  • cottage cheese - 450 g
  • flour - 450 g
  • eggs - 2 pcs (small)
  • cold butter - 375 g
  • vanilla sugar - 1 sachet
  • baking powder - 1.5 tsp
  • salt - 0.5 tsp
  • filling: thick jam, boiled condensed milk, nutella

Method of preparation:

1. Sift flour together with baking powder. Add salt and mix.

2. Place in the bowl of a food processor with the "knife" attachment, add the chopped cold butter and beat until fine crumbs.

3. Pass the cottage cheese through a meat grinder or sieve.

4. Add to the flour mixture and stir with a spoon.

5. Add eggs and vanilla and knead the dough.

6. Divide it into 3 parts, wrap it in plastic film and put it in the refrigerator for 1 hour.

7. Take out one part, roll into a circle, cut into the desired pieces, put the filling (like boiled condensed milk) on the edge of each one and roll up the bagels.

8. Bake on parchment at 200 degrees for 20 minutes.

9. Sprinkle with powdered sugar when ready.
