Bagels are a versatile tea pastry that will go well with any drink. This is an ideal dessert that will stay fresh for a long time and does not require long cooking. The key is to make a fluffy dough. For this, you need to add kefir to the base.

Ingredients:
- 150 ml of milk
- 75 g of sugar
- 8 g of dry yeast (or 25 g of fresh yeast)
- 2 eggs
- 50 g of butter
- 150 ml of kefir
- a pinch of salt
- 1 tsp of vanilla sugar
- 650-700 g of flour
- 1 egg yolk + 1 tbsp of milk - for greasing
- you can use any filling (poppy seeds, thick jam, cherries)
Method of preparation:
1. Add baking soda, salt, eggs to kefir. Mix well.
2. Add melted butter.
3. In a separate bowl, mix warm milk, yeast, and sugar. Leave for 5-10 minutes.
4. Add vanilla sugar to the kefir mass.
5. Stir and pour in the yeast mass.
6. Mix gradually and add flour.
7. Knead the dough and put it in a warm place for an hour. Then refrigerate for about 40 minutes.
8. Divide the dough into 3 parts.
9. Roll out one part and divide it into 4 more parts. And then each part into 3 more.
10. Form the bagels.
11. Grease them with a mixture of egg yolk and milk.
10. Bake at 180 degrees for 20-30 minutes (until lightly browned).
