Food blogger Valeria Velygura shared how to make spinach and raspberry honey cake on Instagram. According to her, such a honey cake will not leave anyone indifferent, and may even become your favorite dessert.
Ingredients for the filling
- Sugar - 40 g
- Corn starch - 40 g
- Raspberries - 400 g
- Lemon juice - 1 tsp.
Ingredients for the dough
- Eggs - 5 pcs.
- Sugar - 250 g
- Salt - a pinch
- Honey - 125 g
- Butter - 150 g
- Soda - 1 tsp
- Spinach - 150 g
- Flour - 900 g
Ingredients for the cream
- Cream cheese - 800 g
- Powdered sugar - 200 g
- Cream 33% - 400 ml
How to prepare the filling
1. Combine the sugar and starch and add it to the fresh or thawed raspberries along with the lemon juice.
2. Cook over medium heat until thickened.
3. Cover with contact wrap and let cool completely.
How to make the dough
1. Combine eggs, sugar, salt, butter, honey and put in a water bath.
2. Stir until the mixture becomes homogeneous.
3. Add baking soda and keep stirring constantly for 1-2 minutes.
4. Remove from heat, add the spinach chopped in a blender and stir. Leave for 15 minutes.
5. Gradually sift the flour and knead a very soft dough that will stick to your hands a little.
6. Form into 8 balls and refrigerate for 1 hour.
7. Roll out each ball as thinly as possible on parchment and prick with a fork.
8. Bake in a preheated 180 degree oven for 5 minutes.
9. Let cool and cut the cakes into the desired shape.
10. Grind the leftovers in a blender to a crumb.
How to make the cream
1. Beat cream cheese, powdered sugar and cream until thickened. ⠀ ⠀
Assemble the cake
1. Assemble the cake according to the principle of cake - cream - cake - cream.
2. Add raspberry filling to the 1st, 3rd, 5th and 7th cakes.
3. Cover the entire cake with a thin layer of cream and sprinkle with crumbs.
4. Put in the fridge overnight, garnish and serve.
