What to add to liver pate: it will be tender and flavorful
Homemade liver pate is a delicious, simple and budget-friendly appetizer. The main ingredient - liver - has a rather bitter taste and a specific flavor. For this reason, it is advised to combine it with other ingredients, such as mushrooms, and add a little alcohol: whiskey, cognac, or wine for a special flavor.
Ukrainian chef Valeriy Ponomar (ponomar_valeriy) shared a recipe for liver pate with mushrooms on his Instagram page.
Ingredients:
- champignons - 500 g
- garlic - 2 cloves
- onion - 2 pcs
- carrots - 1 pc
- chicken liver - 400 g
- salt, pepper
- nutmeg
- cognac\whiskey - 2 tbsp
- butter - 50 g
- cream 33% - 200 ml
Method of preparation:
1. Chop the onion, carrot and garlic. Fry everything together for 3-4 minutes.
2. Peel and chop the mushrooms. Add to the vegetables and cook until the moisture evaporates.
3. Peel and chop the liver. Add to the mushrooms. Season immediately with salt and pepper and nutmeg.
4. When the liver is ready, add cognac/whiskey and evaporate the alcohol for 2 minutes.
5. Add butter and cream. When the cream becomes thick, remove the mass from the heat and beat with a blender until smooth.
6. Cool the finished pate and refrigerate until it thickens completely.
