This dessert is extremely tender, fluffy, and airy. It is based on crispy shortbread dough and a delicious sweet filling. And it is made not from cottage cheese, but from sour cream. That's why the texture of the cheesecake is very light and not clogged.

Ingredients for the dough:
- flour - 280 g
- butter - 180 g
- baking powder - 2 tsp
- a pinch of salt
- sugar - 30-40 g
- eggs - 1 pc.
Ingredients for the filling:
- sour cream - 600 g
- powdered sugar - to taste
- eggs - 3 pcs.
- sour cream thickener - 1 tsp.
- lemon juice
- lemon zest
- vanilla sugar
Method of preparation:
1. Mix frozen butter with sifted flour, baking powder and salt and grind into crumbs.
2. Mix egg with sugar and add to the prepared crumbs.
3. Knead the dough and refrigerate for 30 minutes.
4. Make the filling: add powdered sugar, eggs, thickener, vanilla sugar, lemon zest, and lemon juice to the sour cream.
5. Mix with a whisk until smooth.
6. Cover the mold with parchment, put the dough on it, make the sides, and pour the filling.
7. Bake at 170-200 degrees for 55 minutes to 1 hour and 10 minutes.
8. Cool completely after baking.
9. Leave in the refrigerator overnight.
10. Decorate as desired.
