What seasonal vegetable to add to chicken cutlets to make them juicy - and budget-friendly

Fried chicken cutlets often turn out dry. But this problem can be easily solved if you add a very budget-friendly summer vegetable to the minced meat. We're talking about zucchini.

The idea of making juicy chicken cutlets with zucchini was published on the Instagram page of food blogger Daria (vistovska_cooking). They will be crispy and golden.

Ingredients:

  • chicken fillet - 1 small
  • zucchini - 1/2 pc.
  • tomato - 1 pc.
  • egg - 1 pc.
  • flour - 2-3 tbsp
  • hard cheese - 80 g
  • salt, pepper, smoked paprika
  • dill - to taste

Method of preparation:

1. Cut the fillet into small cubes.

2. Add tomato grated on a fine grater and squeezed zucchini.

3. Add the egg, flour, cheese, spices and herbs.

4. Mix everything well.

5. Put a tablespoonful on a preheated frying pan.

6. Fry on medium heat on both sides until golden brown.
