What potatoes make the most delicious pancakes: Chef's recommendation

It would seem that delicious potato pancakes can be made from absolutely all types of potatoes. But this is far from the case. A young vegetable is definitely not suitable for this dish.

Famous Ukrainian chef Sava Libkin (savvalibkin)  shared on Instagram what kind of potatoes make the most delicious pancakes. We are talking about old potatoes, which are definitely left in your cellar from last season. They contain a lot of starch, so the products will be perfect.

Ingredients:

• old potatoes - 1 kg.
• sour cream - 2 tbsp with a slide
• egg yolks - 4 pcs.
• onions - 200 g
• corn starch - 1 tbsp.

Method of preparation:

1. Grate potatoes and onions on a fine grater.

2. Squeeze out excess moisture with your hands.

3. Add sour cream, eggs, starch, and salt.

4. Then mix well.

5. Heat a little oil in a heavy-bottomed frying pan.

6. Fry the pancakes on both sides until cooked.

7. You can serve pancakes with fried porcini mushrooms, salmon, or with sour cream and herbs.
