Onions in cutlets are an essential ingredient that gives the dish a special piquancy and juiciness. Usually, fresh onions are added to cutlets, which can sometimes add extra bitterness. To avoid this, onions should be fried beforehand. This way, the vegetable is juicier and more tender.

Ingredients:
- chicken – 1.3 kg
- onion – 400 g
- butter – 40 g
- white bread – 180 g
- milk – 250 ml
- garlic – 4 cloves
- spices: salt, pepper, paprika
- parsley – 1/2 bunch
- oil (for frying)
Method of preparation:
1. Chop the onion and fry in oil until soft, transparent, and browned.
2. At the end of cooking, add garlic to the onion. Stir and set aside.
3. Pour milk over the bread.
4. Chicken wash, dry and grind through a meat grinder. For these patties it is best to use the meat from the thigh of the chicken, with it they will be even juicier.
5. Also through a meat grinder to the meat grind the onion and pressed bread. Add the spices and chopped parsley to the mass. Mix and beat the minced meat.
6. Spoon the cutlets into the pan and fry. If desired, you can additionally bake the cutlets in the oven at 170 degrees for 15 minutes.
