What meat to choose for aspic so that it is rich and transparent
In Ukraine, aspic is prepared for completely different occasions. And the main features that determine the quality of the dish are the amount of meat and the transparency of the broth. Therefore, in order for the taste and appearance to be perfect, you need to choose the right meat. Turkey is perfect as it is quite dietary and soft.

Ingredients:
- turkey - 4 kg
- water - 4 liters
- onions - 2 pcs
- carrots - 2 pcs
- celery root - 1 pc
- garlic - 4 cloves
- bay leaves - 4 pcs
- allspice
- salt
- gelatin - 1 tbsp
Method of preparation:
1. Cut the turkey into pieces, cover with cold water, and leave overnight.
2. Drain the water, rinse the meat and put it in a saucepan.
3. Add water and put on fire.
4. Bring to a boil and drain.
5. Pour 4 liters of water again and bring to a boil.
6. Turn the heat to low and leave for 4-5 hours, periodically collecting fat.
7. Peel the carrots, onions and celery. Add vegetables, bay leaf and allspice, and cook for another 1 hour.
8. Remove the meat (it should be well cooked and fall off the bones).
9. Add the chopped garlic and salt to the broth (the broth should be slightly over-salted to taste).
10. Cover and leave for 30-40 minutes.
11. Separate the meat from the bones and cut into pieces. Put in bowls.
12. Strain the broth through a sieve.
13. Pour gelatin and 1-2 ladles of broth into bowls and mix well.
14. Chop the carrots and add to the meat.
15. Pour the broth into bowls and leave to cool overnight.
