Shawarma came to us from the Middle East. There it is traditionally cooked from lamb and according to a special method. Thin slices of meat are placed on a vertical spit and slowly rotated over a fire or other heat source. The inside of the meat is slowly cooked, after which it is shaved off with special devices and served on the table. This makes it tender and extremely juicy.
But since the technology of cooking shawarma at home is somewhat different, it is recommended to use ordinary chicken instead of lamb. This version does have its differences. However, it is almost as good in taste.
Preparing chicken for shawarma
Ingredients:
- Chicken thighs – 2 pcs
- Olive oil – 1\2 tbsp
- Juice of 1 lemon
- Garlic – 3 cloves
- Kosher salt – 2 tsp
- Ground cumin – 1 tsp
- Ground coriander – 1 tsp
- Black pepper – 1\2 tsp
- Turmeric – 1\2 tsp
- Ground cinnamon – 1\4 tsp
- Cayenne pepper – 1\4 tsp
- Onion – 1 pc
For the sauce:
- Greek yogurt - 1\2 tbsp
- Juice of 1\2 pieces of lemon
- Olive oil – 1 tbsp
- Garlic – 2 cloves
- Salt
- Red pepper
Method of preparation:
- Mix oil, lemon juice, chopped garlic, and seasonings in a bowl. Put the chicken in the marinade, cover with cling film, and refrigerate for at least 2 hours.
- Add the onion to the marinade and mix well.
- Preheat the oven to 250 degrees. Coat a baking sheet with oil. Put the chicken in the pan and bake for about 30 minutes.
- Let cool and cut into pieces.
- Prepare the sauce: beat yogurt, lemon juice, oil, and garlic. Add salt and pepper.
