What kind of dough should be prepared for pancakes with meat, said Yevhen Klopotenko
Pancakes are the main dish of the upcoming Shrovetide holiday, which begins in Ukraine on February 28. These days, pancakes are prepared with completely different fillings and on different doughs: water, milk, kefir, milk, mayonnaise, and whey.
On his YouTube channel, chef Yevhen Klopotenko shared a recipe for delicious pancakes with meat that you can make in just 20 minutes (scroll to the end of the page to watch the video).
A tip from the chef: to make the dough homogeneous, be sure to strain it through a sieve and, most importantly, cook it with water for this filling!
Ingredients:
- Chicken fillet - 2 pcs.
- Hard cheese - 200 g
- Tomato juice - 30-50 ml
- Garlic - 1 head
- Flour - 150 g
- Eggs - 3 pcs.
- Water - 300 ml
- Oil - 2 tbsp. l
- Red pepper - a pinch
- Ketchup - 1 tsp.
- Sour cream - optional
- Salt - to taste
Method of preparation:
1. Boil the chicken fillet, let it cool.
2. In a bowl, beat the eggs with water and oil until smooth, add salt.
3. Sift the flour, add to the egg mixture and mix well with a whisk, then strain through a sieve to avoid lumps.
4. Fry the pancakes.
5. Cut the fillet, put it in a blender, add tomato juice, salt, garlic, red pepper and beat until it becomes a paste.
6. Grate the cheese.
7. Spread the pancakes with the filling, sprinkle with cheese, and roll them up.
8. You can serve them with sour cream.
