A vegan burger is an ideal option for those who have decided to give up animal food. In addition, the dish is a healthier variation of popular fast food. So those who watch their diet will also appreciate this option.

The recipe for the vegan burger was shared by food blogger and chef Oksana Matveeva. It was posted on Instagram.

According to the expert, the whole secret of the burger lies in the fluffy buns made with psyllium. This is the husk of plantain seeds that grow in India, Spain, and France. Thanks to this ingredient, the egg-free and gluten-free baked goods are perfect.

Ingredients:

For the buns:

  • Whole wheat flour - 220 g
  • Psyllium - 6 g
  • Flax seeds - 20 g
  • Salt - 0.5 tsp
  • Baking powder - 8 g
  • Olive oil - 12 ml
  • Water - 220 ml
Sesame seed buns

For the cutlet:

  • Chickpeas - 200 g
  • Zucchini - 1 pc.
  • Onion - 1 pc.
  • Psyllium - 1 tbsp. 
  • Soda - 1\2 tsp.
  • Zira - 1\2 tsp.
  • Dried garlic - 1\2 tsp.
  • Whole wheat flour - 1 tbsp.
  • Sesame seeds
  • Salt
  • Pepper
  • Parsley
Chickpea cutlets

Method of preparation:

  1. First, prepare the buns. Mix psyllium with water.
  2. Sift all dry ingredients and mix. Add the liquid with psyllium and oil. Knead the dough.
  3. Form a ball, flatten it a little and put it on parchment. Sprinkle with sesame seeds.
  4. Bake at 180 degrees for 35 minutes.
  5. Prepare the cutlets. Pre-soak the chickpeas in water and drain.
  6. Blend the chickpeas and onion in a blender.
  7. Grate the zucchini and remove the juice.
  8. Combine the two masses and form patties. Roll in sesame seeds.
  9. Bake at 180 degrees for 35 minutes.
  10. Create a burger to your liking: add your favorite sauce, herbs, vegetables or avocado.
