What dough to make bagels from: soft, fluffy and grow well
If you want to make soft, airy, and fluffy bagels, you should make them with yeast dough with kefir. It is very easy to work with and always turns out well. These bagels can be filled with any kind of filling: cherries, jam, jam, apples, poppy seeds, cottage cheese.

Ingredients:
- milk - 150 ml
- sugar - 75 g
- dry yeast - 8 g \ fresh yeast - 25 g
- eggs - 2 pcs
- butter - 50 g
- kefir - 150 ml
- soda
- salt
- vanilla sugar - 1 tsp
- flour - 650-700 g
- 1 egg yolk + 1 tbsp. l milk - for greasing
The filling can be any.
Method of preparation:
1. Add a pinch of baking soda and salt, eggs to the kefir. Mix well.
2. Add the melted butter and mix again.
3. Mix warm milk, yeast and sugar separately. Leave for 5-10 minutes.
4. Mix the finished dough with the kefir mass, adding vanilla sugar. Stir well.
5. Gradually add the flour and knead the elastic dough. Put the dough in a warm place for 1 hour, then refrigerate for 40 minutes.
6. Divide the finished dough into 3 parts, roll each of them out thinly. Cut into long triangles.
7. Put the filling on each triangle and roll it into a bagel. Place on a baking sheet covered with parchment.
8. Grease the bagels with egg yolk and milk. Bake at 180 degrees for 20-30 minutes.
