What dough to choose for puffy varenyky: any filling will do
The elasticity of traditional yeast dough for varenyky depends on the quality of the yeast itself. Therefore, a dish made with this base will not always be perfect. To make the texture of the varenyky fluffy, they should be made with baking soda. You will need to steam them.
The idea of steamed varenyky was published on the Instagram page of food blogger Yuliana (julianne_kiss).
Ingredients:
- kefir - 375 g
- flour - 450 g
- baking soda - 1 tsp
- salt - a pinch
Method of preparation:
1. Sift flour into kefir and add baking soda and salt.
2. First, mix with a spoon, then transfer to a table and knead with your hands for about 5 minutes.
3. If the dough sticks to your hands, add a little flour.
4. Wrap the dough in cling film and leave it in the refrigerator for half an hour.
5. After half an hour, roll out the dough, cut out circles with a glass and form varenyky.
6. Pour 1/3 of the water into a saucepan, put a sieve on it and cover with a lid.
7. Grease the sieve and the finished varenyky with vegetable oil each time you them on it.
8. Steam for around 6 minutes (depending on the size).
