I once told you how to freeze sponge cakes. Today I want to share my little secret (although it may not be a secret for everyone) - ready-made desserts can also be frozen. And sometimes it is even necessary - for example, mousse cakes.

It often happens that you don't have enough time to make elaborate cakes. Or another problem - suddenly you have a few extra pieces of dessert... don't throw them away, right? There is a brilliant solution: the freezer. It will save time and preserve desserts.
I'll tell you what and how to freeze and how to defrost.
What to freeze
- sponge/mousse desserts
- desserts made of shortcrust pastry
- puff pastry
- choux pastry (can be frozen before baking or after)
- pasta
- yeast pastries.
How to freeze
- Freeze only when the dessert has cooled completely.
- Before freezing, wrap tightly with cling film, in several layers, to prevent air from entering. Desserts such as macarons can be placed in a container with a tight-fitting lid.
- You can store desserts in the freezer for no more than 1-3 months, depending on the composition of the dessert.
How to defrost
- Always defrost in the refrigerator to ensure slow defrosting.
- If the dessert has already been thawed, do not defrost it again.
