Cabbage soup or kapusnyak is a soup with sauerkraut that was often prepared since ancient times. The dish is quite budget-friendly because its main components are broth, cabbage, and cereal. And it is the last ingredient that determines the consistency and satiety of cabbage soup.
The idea of cooking cabbage soup with millet was published on the Instagram page of a food blogger with the nickname recepti_dariko.
Ingredients:
- 500-700 g of meat (pork, beef or chicken)
- 0.5 kg of sauerkraut
- 3-4 potatoes
- 1 carrot
- 0.5 cups of millet
- bay leaves, allspice, ground pepper, salt
- herbs for serving
Method of preparation:
1. Prepare the meat: wash, cover with cold water, cut into pieces, and put on fire. Bring to a boil and drain the first broth.
2. Add cold water again, bring to a boil and cook until tender.
3. Peel and wash the potatoes and carrots. Pass the carrots and sauerkraut thorough a meat grinder. Put the potatoes (whole) into the pot with the broth.
4. After 10 minutes, add the washed millet. Cook for another 10 minutes. Add cabbage and carrots. Cook until tender.
5. When the potatoes are ready, mash them with a fork or crush them, season with salt and pepper, and add bay leaf and allspice. Cook for 5 minutes and turn off the heat. Serve with fresh herbs.
