What an unusual pie to make with plums: an idea for a simple and gourmet dessert

Plum pie is one of the most popular desserts in the summer and fall. The fruit is easy to pick and doesn't need to be peeled, so the process is quite quick. But even such a simple pastry can be made gourmet if you combine it with caramel and ice cream

The idea of making a plum pie with caramel was published on the Instagram page of a food blogger with the nickname tallykoroleva.

Ingredients for the dough:

  • eggs – 2 pcs
  • sugar – 0.5 cups
  • melted butter – 60 g
  • baking soda – 0.5 tsp
  • salt – a pinch
  • baking powder – 0.5 tsp
  • sifted flour – 1.5 cups
  • sour cream – 200 g

Ingredients for caramel:

  • good homemade honey – 2 tbsp
  • brown sugar – 0.5 cups
  • butter – 60 g
  • filling – fresh plums, about 1 kg

Method of preparation:

1. Wash and cut the plums into small pieces. Dry them with a paper towel. Cover the bottom and the walls of the baking dish with parchment paper.

2. Prepare the caramel: put all the ingredients for the caramel in a frying pan.

3. Cook for exactly one minute. Quickly pour the hot caramel into the mold in which you will bake the plum cake. Be careful, the caramel hardens quickly, so do not pour for long.

4. Smooth with a knife. Leave for about 5 minutes.

5. As soon as the caramel becomes hard, spread the plums on top.

Method of preparation of the dough:

1. Put eggs, sugar, salt in a deep bowl. Beat with a mixer into a foam. Add warm melted butter and sour cream. Add baking soda and baking powder to the flour. Sift everything together directly into the egg mixture. Mix the dough, but not for long.

2. Put the finished dough into the mold with the plums spread on the caramel. Smooth it out.

3. Bake the cake in a preheated 180-degree oven for 35 minutes.

4. Check the cake's doneness with a toothpick. It should be dry.

5. Cover the mold with the hot cake with a plate and quickly turn it upside down. Cut into portions. Top with a scoop of vanilla ice cream and fresh mint leaves.
