Warm crispy eggplant salad: a recipe for a delicious and satisfying dinner dish
Eggplants are ideal vegetables for making delicious salads, caviar, and snacks. They can also be tasty canned and made into caviar.
The cook shared on Instagram a recipe for a delicious salad of crispy eggplant, tomatoes and cheese.
Ingredients:
- eggplants - 4 pcs.
- corn starch
- tomatoes - 12 pcs.
- cream cheese - 1 p.
- parsley/cilantro - 1/2 bunch
- oil - for frying
- balsamic - to taste
- spices: salt, pepper - to taste
Method of preparation:
1. Wash the eggplant, cut off the tails and cut into large pieces. Salt, mix and set aside for 20 minutes. Remove excess moisture with paper towels.
2. Heat the oil. Add the starch to the dried eggplants, mix and put into the hot oil and fry, stirring over high heat until golden brown. Put the fried eggplants on a paper towel to absorb excess fat.
3. Wash the tomatoes and cut them into large pieces.
4. Put the tomatoes and eggplant on a plate, season with salt and pepper, put the cream cheese slices on a small spoon, sprinkle with finely chopped parsley or cilantro, drizzle with balsamic and you're ready to eat!
