Volyn-style meat rolls: what to wrap inside

Kruchenyky are so-called meat rolls that can be made with a variety of fillings: vegetables, mushrooms, cheese, and even dried fruit. One of the cooking options, which is typical for Western Ukraine, is sauerkraut. This option of the dish is very original, unusual, and hearty.

Food blogger Olena shared a recipe for Volyn-style chicken rolls with sauerkraut on her Instagram page.

Ingredients:

  • meat - 500-600 g
  • sauerkraut - 250 g
  • onion - 1 pc
  • rosemary - 1-2 sprigs
  • flour (for breading)
  • water
  • salt, pepper

Method of preparation:

1. First, prepare the filling. To do this, cut the onion into half rings and fry until light golden brown.

2. Add sauerkraut to the onion. Simmer until tender. During the cooking process, the cabbage may release juice, and if it starts to fry rather than stew, add a little water. Remove the sauerkraut from the heat and let it cool.

3. Meanwhile, prepare the meat. Wash it and cut into pieces, like for chops.

4. At this stage, you need to form the roll. Put a little filling on each piece of meat and wrap in a roll. Fix the sides with a toothpick.

5. Roll them in flour and fry in a pan until golden brown.

6. After that, put the rolls in the mold. Pour water so that it reaches half of the rolls (you can also use broth). Add rosemary. Cover the baking dish with foil.

7. Bake at 200 degrees for 40 minutes.
