Autumn is the time to eat as many healthy and seasonal vegetables as possible, among which experts single out pumpkin, beets, carrots, celery, and cabbage. They are best consumed raw, but you can also prepare many tasty and healthy dishes, including mashed potatoes.
On Instagram, MasterChef judge and culinary expert Volodymyr Yaroslavsky shared his recipe and secrets for the perfect mashed peas, which will appeal to even those who don't like this healthy vegetable.
Tips from the cook:
- it is better to choose small, young, and fresh peas
- after cooking, let the peas cool down and then blend in a blender
- add thyme to the dish
- be sure to mash the peas through a sieve and don't forget the butter
- you can add both water and broth to the dish
Ingredients:
- green peas - 400 g
- fresh spinach - 60 g
- onion - 100 g
- butter - 50 g
- vegetable oil - 15 g
- salt, pepper - to taste
Method of preparation:
1. Defrost the peas, but it is better to take fresh and young ones.
2. Finely chop the onion, put it in a saucepan, and fry in vegetable oil until tender.
3. Add the green peas, add water or vegetable broth, salt, and pepper, and simmer for about 5-7 minutes.
4. Then add the spinach leaves, bring to a boil, add thyme, and immediately remove from heat.
5. Allow the ingredients to cool, transfer to a blender, and blend until smooth.
6. Rub the prepared puree through a sieve, and add a little broth or water.
7. Heat the mashed potatoes and add the butter, and salt to taste.
