Vegetable salad for the winter with eggplant and peppers: how to prepare the preservation

Vegetable salads are a great wintertime preparation. You'll always have something to garnish your porridge, potatoes, and pasta. You can also put them on the holiday table as an appetizer. The cost is saved at times.

The idea of making a canned salad with vegetables for the winter was published on the Instagram page of food blogger Olena with the nickname olenkavseprosto. It is a delicious combination of peppers, eggplant and tomatoes.

Ingredients:

  • eggplants - 1 kg.
  • tomatoes - 1 kg.
  • sweet pepper - 0.5 kg.
  • onions - 0.3 kg.
  • garlic - 5 cloves
  • salt - 1 tbsp.
  • sugar - 2 tbsp.
  • water - 50 ml.
  • oil - 120 ml.
  • vinegar - 90 ml.

Method of preparation:

1. Chop the vegetables, add salt, sugar, water and oil.

2. Cook for 10 minutes.

3. Add vinegar and cook for another 5 minutes.

4. Put the salad in sterilized jars.

5. Seal in 4 half-liter jars.
