Vegetable lasagna with turkey according to Oprah Winfrey's recipe

Lasagna is a hearty and delicious Italian dish traditionally made from thin sheets of dough with layers of different fillings. But you can also make it without dough - replacing it with vegetables, which will not spoil the taste.
FoodOboz editorial team shares a recipe for a delicious vegetable lasagna with turkey, which is a favorite of the American TV presenter, actress, and producer Oprah Winfrey.
Ingredients:
Filling:
- minced turkey - 350 g
- dry onion - 2 tsp.
- fresh onion - 1 pc.
- parsley - 3 tbsp.
- fresh basil - 1/2 tbsp.
- dry garlic - 2 tsp.
- ground fennel - 1/2 tsp.
- fresh garlic - 1/2 tbsp.
- white wine - 1/3 cup
- whole tomatoes with juice - 800 g
- salt - 2 tsp.
- pepper and baking soda - a pinch
For the lasagna:
- zucchini - 2 pcs.
- turnip - 1 pc.
- celery root - 1 pc.
- eggplant - 1 pc.
- mozzarella - 200 g
- lemon - 1 pc.
Method of preparation:
- Sauce: Place the minced meat in a large bowl, add dry garlic, onion, fennel, chopped parsley, and basil, season with salt and pepper, and mix well with your hands until smooth.
- Pour oil into a frying pan, heat well, add chopped onion, fry well until golden brown, then add chopped garlic, stir and fry for another 1-2 minutes.
- Then add the minced meat, mash it well, and fry for about 10 minutes.
- After that, pour in the wine, stir, and let it evaporate a little, then add the tomatoes, add a pinch of baking soda to make the sauce thicker, stir and simmer.
- Wash the vegetables and cut them into thin slices and you can assemble the dish.
- Put the first layer on a baking sheet – the sauce, sprinkle it with grated mozzarella, top with zucchini, repeat the same, making 4 more layers with sauce, cheese, and vegetables, ending with zucchini, then cover the lasagna with sauce and cheese.
- Put in the oven and bake for 45-50 minutes until the vegetables are tender.
The dish can be served immediately, but it will also be delicious when cold.
