A kebab doesn't have to be meat; a vegetable skewer can be a great alternative to a meat dish. If you marinate the vegetables well and properly, you will get a delicious diet kebab.

Ingredients:

  • cherry tomatoes – 5-6 pcs
  • zucchini – 1 pc
  • red onion – 6-8 pcs
  • carrots – 1-2 pcs
  • young potatoes – 5-7 pcs
  • pine nuts – 2 tbsp
  • olive oil – 200 ml
  • garlic – 3 cloves
  • rosemary – 2 sprigs
  • salt, pepper – 0.5 tsp
  • Italian herbs – 1 tsp
  • skewers – more than 10 pcs

Method of preparation:

  1. Skewers need to be soaked in cold water.
  2. Wash the vegetables, cut them into large slices, and thread them on the skewers.
  3. Make the sauce: mix olive oil with garlic, rosemary, salt, pepper, and herbs, and mix well or whisk in a blender.
  4. Pour the prepared sauce over the vegetables and set aside to roast for 10-15 minutes.

It is worth noting that this kebab can even be fried in the microwave.
