Varenyky with lard and spaghetti: an unusual recipe by Yevhen Klopotenko
Varenyky are a traditional Ukrainian dish made with different fillings and doughs. The most important thing is to make a fluffy and light dough, which determines the taste of the dish.
Chef Yevhen Klopotenko shared a recipe for delicious varenyky filled with spaghetti and lard on his website.
Ingredients:
- wheat flour - 350 g
- water - 180 ml
- eggs - 1 pc.
- sunflower oil - 3 tbsp
- boiled spaghetti - 100-150 g
- onion - 1 pc.
- salt, pepper - to taste
Method of preparation:
1. For the dough, pour flour into a bowl, add the egg and water at room temperature.
2. Add oil and knead the dough thoroughly, it should be smooth and elastic. Wrap in plastic film and let it rest in the refrigerator for 20 minutes.
3. Finely chop yesterday's boiled pasta and put it in a bowl.
4. Cut the lard and onion into small cubes and fry until golden brown.
5. Set aside a third of the onion and lard in another bowl, add the rest to the pasta, mix the filling, and season with salt and pepper.
6. Roll out the dough, cut out circles, put the pasta and lard filling in, and seal the edges well so that the filling does not fall out.
7. Bring the water to a boil, add the varenyky and cook for 2-3 minutes.
Pour the onion and lard roast over the varenyky.
