Useful vegetable soup for dinner: an easy recipe
If you want to make a tasty and healthy soup for lunch or dinner, be sure to choose vegetables. You can also use meat, such as chicken.
Popular Ukrainian actress Olha Sumska shared a recipe for delicious and healthy pumpkin cream soup on Instagram.
Ingredients:
- pumpkin - 300-500 g
- onion - 1 pc.
- garlic - 2-3 cloves.
- carrots - 1 pc.
- water - 2 cups
- olive oil or butter - 1-2 tbsp
- salt, pepper - to taste
- breadcrumbs - 50 g
- Parmesan cheese - 50 g
- nuts, seeds - optional
Method of preparation:
1. Dice the pumpkin.
2. Pour olive oil into a saucepan or add a piece of butter.
3. Add the diced onion and grated carrots and fry.
4. Add chopped garlic, salt and pepper, and stir.
5. Add the pumpkin and simmer until soft.
6. Beat the soup in a blender until smooth.
7. Make breadcrumbs.
8. Grate the cheese.
9. Pour the prepared soup into a bowl, add the cheese, breadcrumbs, nuts or seeds.
The dish will be very tasty and low in calories.
