Beets are an ideal vegetable for salads, appetizers, sauces, and first courses. It can also be pickled and added to sauces.

The chef shared a recipe for a delicious and budget-friendly beetroot salad with cheese, pistachios, and honey on Instagram.

Recipe

Ingredients:

  • beets - 2 pcs.
  • salad mix
  • grain mustard - 1/2 tsp.
  • honey - 1 tbsp.
  • olive oil - 1 tbsp.
  • lime juice - 1 tsp.
  • soy sauce - 1 tsp.
  • black pepper
  • gorgonzola cheese - 50 g
  • pistachios - 10 g
  • leek - 5-10 g

Method of preparation:

1. Bake the beets in the oven at 180C for 40 minutes to 2 hours depending on the size. Check for softness with a toothpick.

2. For the sauce, mix soy sauce, olive oil, honey, mustard and lemon juice.

3. Chop the beets, put them on a dish, top with greens, onions, cheese and pour the sauce over.
