Unusual varenyky with buckwheat, cottage cheese and honey
Varenyky are one of the traditional Ukrainian dishes that everyone loves. There are so many recipes that everyone can find their perfect taste. The most important thing when cooking this dish is to make the perfect dough.
Chef Yevhen Klopotenko shared a recipe for delicious varenyky with an unusual filling, namely buckwheat, cottage cheese, and honey, on his YouTube channel (to watch the video, scroll to the end).
Ingredients for the dough:
- 300 g flour (+ for dusting)
- 200 ml of 2.5% kefir
- ½ tbsp of sugar
- ½ tsp salt
Ingredients for the filling:
- 330 g of 9% cottage cheese
- 100 g of buckwheat
- 2 tbsp. sugar
- 50 g of 82% butter
- 1 tbsp. honey
Method of preparation:
1. Steam the buckwheat: pour 100 g of buckwheat into a small bowl and cover with boiling water in a ratio of 1:2.
2. Add a pinch of salt, stir and leave for 15-20 minutes.
3. Pour flour into a large bowl, add sugar and salt.
4. Add kefir, mix well with a spoon, knead the dough and leave it for 20 minutes to rise.
5. For the filling, mix steamed buckwheat with cottage cheese and sugar.
6. Roll out the finished dough and use a glass or any other suitable utensil to make circles out of the dough. Stretch them a little with your hands and put the filling on one edge and pinch with another.
7. Bring the water to a boil, add salt and throw in the varenyky. Cook for about 2 minutes after they float.
8. Melt butter in a frying pan, add honey, and heat for about 1 minute.
9. Put the finished varenyky on a plate and pour the mixture of butter and honey over.
