Pumpkin roll with cheese and spinach

Ingredients:

For pumpkin sponge cake.

  • eggs - 3 pcs.
  • pumpkin puree - 300 g
  • flour - 160 g
  • baking powder - 5 g
  • nutmeg - a pinch
  • salt - a pinch

For the filling:

  • champignons - 300 g
  • onion - 1 pc.
  • spinach - 50 g
  • hard cheese - 100 g
  • sour cream - 1 tbsp
  • salt, pepper - to taste

Method of preparation:

  1. Wash and cut the pumpkin into cubes, and boil.
  2. Put the cooked pumpkin in a blender, blend until smooth, and cool.
  3. Put the puree into a large bowl, add the flour, egg, baking powder, nutmeg, and salt, and mix thoroughly.
  4. Put parchment on a baking sheet, put the dough, and bake for 15 minutes at 180 C.
  5. Remove the hot sponge cake, cover it with parchment, roll it up, and leave to cool.
  6. Filling: wash and peel the mushrooms, finely chop the onion, and fry everything in vegetable oil until golden brown.
  7. Wash the spinach and throw it to the mushrooms, add sour cream, and mix.
  8. Unwind the biscuit and put the prepared filling, sprinkle it with hard cheese, roll it up again, and refrigerate.

2. Baked pumpkin with Provencal herbs and garlic

Ingredients:

  • pumpkin pulp - 1 kg
  • garlic - 1-3 cloves
  • salt - to taste
  • oil - 2-3 tbsp.
  • seasoning "Provencal herbs" - 1/2 tsp.

Method of preparation:

  1. Wash and chop the pumpkin pulp.
  2. Add oil, chopped garlic, salt, and Provencal herbs. Mix everything thoroughly.
  3. Put the pumpkin on a baking sheet and bake for 20 minutes at 200 C.
