Unique prosciutto: an expert tells us what to combine it with
Parma ham is also known as Prosciutto di Parma. It is one of the most famous and respected delicacies in Italy. Ham can be called Prosciutto only if it meets all the necessary conditions. This meat can be a perfect appetizer for wine.

Features that distinguish Prosciutto from other meat
- Pigs must be raised in certain regions of the country. Their age should not exceed 9-10 months and their weight should not be less than 140 kg.
- The pig must eat exclusively in the pigsty. Its diet should include chestnuts, grain, and whey, which is supplied from Parmigiano-Reggiano production facilities. It is the whey that gives the meat its characteristic signature sweetish flavor.
- Pork hams should only be aged in the Parma Valley in the town of Langirano, where the unique microclimate and the presence of winds blowing with a certain strength turn an ordinary pork ham into a gastronomic bestseller.
- Production of Prosciutto di Parma begins in November-December and ends in 10-12 months. Only sea salt is used in the preparation of the ham, which is used to salt the meat while carefully observing all stages of salting, a certain level of humidity and temperature, as well as the strength and direction of the wind, which is controlled by a specially trained person.
- At the final stage of curing, the ham is tested. The meat is pierced in five places with a long needle, and the smell remaining on the needle determines the degree of maturity and quality of the ham.
- If the ham is recognized as evenly ripened, it is stamped with a pentagonal crown with the inscription Parma.

Method of preparation:
1. Cut the cheese into long pieces.
2. Cut the melon into medium-sized pieces.
