Ukrainian-style gazpacho soup: how to prepare a popular first course

Gazpacho is a popular cold Spanish soup that is a summertime favorite. The main ingredients of the first dish are tomatoes, vegetables, and savory spices, which are first boiled until tender and then whipped in a blender until smooth. However, the dish can be slightly modified, making it Ukrainian-style based on meat broth with beets and sorrel.

  • chicken fillet - 1 pc
  • potatoes - 4 pcs
  • beets - 4 pcs
  • sorrel - 1 bunch

Classic recipe for gazpacho soup

Method of preparation:

1. Boil the beets and grate them on a fine grater.

2. Rinse chicken fillet well and cook the broth. Do not add the meat to the soup, use it only for the broth.

3. Cut the potatoes into cubes. Add to the prepared broth. Cook until tender and then mash.

4. Add the beets. Cook for another 5 minutes.

5. Wash, dry and chop the sorrel. Add to the dish. Bring to a boil, then remove from heat and leave to stand.
