1. Chicken with spinach and cream sauce

Chicken fillet with cream and spinach

Ingredients:

  • fillet - 200 g
  • cream - 1 cup
  • garlic - 2-3 cloves.
  • spinach - 300-400 g
  • olive oil - 2-3 tbsp.
  • salt, pepper - to taste

Method of preparation:

  1. Cut the fillet into cubes, and fry until golden brown in vegetable oil.
  2. Chop the garlic and add to the meat, mix.
  3. Pour in the cream, pepper, salt, and mix again.
  4. Wash the spinach, chop it coarsely, and add it to the pan, mix thoroughly, cover, and simmer for 10 minutes over low heat.

Serve with fresh or grilled vegetables, or simply with salads.

2. Catfish in cornmeal with avocado and corn

Ingredients:

  • catfish fillet - 400-500 g
  • salt - 2 tsp
  • pepper - 1 tsp.
  • corn flour - 100 g
  • olive oil - 50 ml
  • avocado - 1 pc.
  • canned corn - 100 g
  • tomato - 2 pcs.
  • lemon - 1 pc.

Method of preparation:

  1. Cut the fish into large pieces, season with salt and pepper, and roll in cornmeal.
  2. Heat a frying pan with oil, fry the fish well on both sides until golden brown. Put it on a paper napkin to drain all the fat.
  3. Dressing: cut the avocado flesh into cubes, add the corn, juice of half a lemon, salt, pepper, and chopped tomato. Mix everything thoroughly.

Put the fish on a plate and top with the dressing.
