Okroshka is an absolutely summer dish and 100% for an amateur, since not everyone likes cucumbers, sausage, and even mixed with sour cream and mineral water. But if you are a fan of this combination of products, then be sure to cook this familiar dish in a completely new way.

Okroshka with kefir

Ingredients:

  • sparkling water - 900 ml
  • kefir - 1 liter
  • sour cream - 2-3 tbsp
  • potatoes - 4 pcs.
  • eggs - 4 pcs.
  • salami - 150 g
  • cucumbers - 5 pcs.
  • radish - 220 g
  • green onions - 2 bunches
  • dill - 1 bunch
  • vinegar - 1 tbsp
  • salt - to taste

Method of preparation:

  1. Boil the potatoes and eggs, cut into small cubes and put into a saucepan.
  2. Finely chop 4 cucumbers, and grate one along with the radish and salami.
  3. Chop the greens, add them to the pan and pour water, kefir, add sour cream, salt, pepper, and vinegar. Mix everything well.

It is best to put the okroshka in the refrigerator for a few hours to infuse it, and then serve.

2. Okroshka on ayran

Ingredients:

  • arrowroot - to taste
  • potatoes - 5-6 pcs.
  • milk sausage or ham - 400 g
  • eggs - 2-3 pcs.
  • fresh cucumbers - 2-3 pcs.
  • green onions - 1 bunch
  • radish - 400 g
  • salt, pepper - to taste

Method of preparation:

  1. Boil potatoes and eggs, cut into small cubes.
  2. Finely chop the cucumbers, herbs, sausage and radish, add to a larger container, season with salt and pepper and pour over the ayran.

Let the dish brew and eat.

3. Okroshka on kvass

Ingredients:

  • kvass - 1 liter
  • young potatoes - 2 pcs.
  • eggs - 3 pcs.
  • radish - 150 g
  • cucumbers - 1-2 pcs.
  • milk sausage - 150 g
  • green onions - 30-50 g
  • dill - 30 g
  • salt, pepper - to taste

Method of preparation:

  1. Boil new potatoes and eggs, cut into small pieces.
  2. Chop the cucumbers, sausage, radish, and herbs.
  3. Add everything to a saucepan and cover with kvass.

It is better to serve okroshka chilled.
