According to Masterclass, it is best to use neutral refined oil for homemade mayonnaise. These include avocado oil, grape seed oil, sunflower oil, or light olive oil.
Unrefined cold-pressed olive oil is never suitable for mayonnaise sauce, as it has a pungent flavor and can lead to stratification of the mayonnaise.
Homemade mayonnaise according to the recipe of Yelyzaveta Hlinska, which she shared on her Youtube channel
Ingredients:
- Yolk - 2 pcs.
- Mustard - 1 tsp.
- Vegetable oil - 300-320 ml
- Lemon juice - 1 tsp.
- White yogurt - 100 g
- Salt.
Method of preparation:
- Beat the egg yolks with mustard.
- Add lemon juice and half of the oil, continuing to beat.
- Gradually add the yogurt and the rest of the oil, alternating them. Whisk the sauce to the desired consistency.
- Season with salt and lemon juice to taste.
