According to Masterclass, it is best to use neutral refined oil for homemade mayonnaise. These include avocado oil, grape seed oil, sunflower oil, or light olive oil.

Unrefined cold-pressed olive oil is never suitable for mayonnaise sauce, as it has a pungent flavor and can lead to stratification of the mayonnaise.

Homemade mayonnaise according to the recipe of Yelyzaveta Hlinska, which she shared on her Youtube channel

Ingredients:

  • Yolk - 2 pcs.
  • Mustard - 1 tsp.
  • Vegetable oil - 300-320 ml
  • Lemon juice - 1 tsp.
  • White yogurt - 100 g
  • Salt.

Method of preparation:

  1. Beat the egg yolks with mustard.
  2. Add lemon juice and half of the oil, continuing to beat.
  3. Gradually add the yogurt and the rest of the oil, alternating them. Whisk the sauce to the desired consistency.
  4. Season with salt and lemon juice to taste.
