The popular "Tkemali" sauce made from plums: perfect for meat
"Tkemali" is a sauce that perfectly complements any meat dish. It is made from plums, which are in full season right now. It has a light sweet note, pleasant tartness, and sourness. This combination makes the taste of chicken, duck, or turkey unsurpassed.
The idea of making Tkemali plum sauce was published on the Instagram page of food blogger Lesia Kalantaievska (kalantaievska.lesia).
Ingredients:
- plums, pitted – 2 kg
- tomatoes – 5 pcs
- sugar – 12 tbsp
- salt – 2 tbsp
- garlic – 1 head
- hot pepper pods – 2 pcs (can be replaced with 1 tsp. of ground chili)
- ground black pepper – 1 tsp
- curry – 6 g
- Suneli hops – 6 g
- vinegar – 1 tbsp
Cooking method:
1. Remove the seeds from the plums.
2. Juice the tomatoes.
3. Pass the garlic through a press, mix all the spices, and cook for 1.5 hours, stirring.
4. Put the sauce in sterilized jars.
