Ratatouille is the best dish in the summer because it consists entirely of seasonal vegetables. It is simple to prepare, but the result is a delicious treat.

Delicious ratatouille made from vegetables

Ingredients:

  • Eggplant – 1 pc
  • Potatoes – 1-2 pcs
  • Sweet pepper – 2 pcs
  • Zucchini – 1-2 pcs
  • Onion – 1 pc
  • Garlic – 1-2 cloves
  • Minced beef – 500 g
  • Oil – 2 tbsp
  • Eggs – 1 pc
  • Salt, pepper – to taste
  • Coriander – 1/2 tsp
  • Greens (any to your taste) – 1 bunch

Filling:

  • Tomato paste – 2 tbsp
  • Boiled water – 1.5 cups
  • Garlic – 1 clove
  • Sugar – 0.5 tsp
  • Salt, spices – to taste

Method of preparation:

  1. Wash the vegetables well, cut them into slices, and peppers into squares.
  2. Pour vegetable oil into a frying pan, fry the potatoes until golden brown, and place them on a paper towel to drain.
  3. Soak the eggplants in salt water to remove all the bitterness, then fry them as well and put them on a napkin.
  4. Fry the zucchini and pepper.
  5. Add chopped onion, garlic, coriander, herbs, salt, pepper, and egg to the minced meat. Mix everything well.
  6. Form patties with wet hands and fry until half cooked.
  7. Put all the vegetables and patties in the mold, alternating them, for example, eggplant, zucchini, potatoes, peppers, and cutlets.
  8. Pour the prepared sauce over the top: mix tomato paste, water, sugar, garlic, salt, and pepper.
  9. Cover the dish with foil and put it in the oven to bake for 30 minutes at 180 °C. After 15 minutes, remove the foil and continue baking for another 15 minutes without the foil.

It is best to serve this dish immediately after cooking, hot, and it will also be delicious with fresh vegetables.
